Double Chocolate CBD Brownies

Why shouldn’t a brownie that delivers a little CBD also be the most delicious brownie ever? We consider these brownie perfection, with their crackly tops, fudgy centers and chewy edges. Omit the walnuts if you prefer—or lightly toast them first, for extra-nutty flavor.

2 ounces unsweetened chocolate, coarsely chopped

½ cup (1 stick) unsalted butter, cut into chunks

2 large eggs

1 cup sugar

4 (20mg) packets Caliper CBD dissolvable powder

1 teaspoon pure vanilla extract

⅔ cup all-purpose flour

½ teaspoon kosher salt

1½ cups coarsely chopped walnuts

¾ cup semi-sweet chocolate chips

 

Preheat the oven to 350°F. Grease an 8-inch square baking pan.

In a heavy saucepan over low heat, melt the unsweetened chocolate and butter, stirring, until smooth. Remove from the heat and let cool slightly. (Microwave variation: Place the chocolate and butter in a microwave-safe bowl and microwave over low heat 30 seconds; stir gently and repeat as needed until melted and smooth, about 1 minute. Stir and let cool slightly.)

In a large bowl with an electric mixer, beat the eggs until frothy, about 3 minutes. Gradually beat in the sugar and Caliper, then the vanilla. Fold in the chocolate mixture, then the flour and salt, beating just until incorporated. Stir in the walnuts and chocolate chips. Transfer to the prepared baking pan and smooth the top with a spatula.

Bake until the top is dry and a toothpick inserted into the center comes out clean with a few fudgy crumbs, about 25 minutes.

Cool completely on a rack, then cut into 16 brownies.
